The perfect fresh (or should we say fresch), delicious and nutritious salad to spice up your lunch or dinner!
We love red lentils, because they are high in iron (which helps eliminate fatigue), and also high in fibre (which improves digestion and helps improve blood sugar control).
- 100g red lentils
- 1 carrot
- 1 - 2 large tomatoes
- 1 bunch parsley
- 1 red pepper
- 1 avocado
- Pinch Himalayan salt
- ½ tsp Cayenne pepper
- Pinch of cumin
- Olive oil and Apple cider vinegar to taste
- Black pepper to taste
How to make:
- Boil the lentils in a medium saucepan, filled with water, over medium heat for around 10-15 minutes.
- Set aside the lentils, cut the tomatoes, red pepper and avocado and grate the carrot.
- Add the chopped parsley and your cooked lentils, then add your desired spices and stir together ...and enjoy! 😊
